Blueberry JamBlueberries
Sugar
Pectin
Wash blueberries and remove any debris. Heat blueberries in Heavy pot with half as much water than berries; mash berries with potato masher.
When heated through, measure, for every 4 cups blueberries mixture you will need 1/3 cup dry pectin (1 box dry pectin) and 3 cups sugar,(for low sugar use 2 cups sugar). Mix sugar and pectin together and add to hot berry mixture; stir to blend well.
Heat to a boil; boil 1 minute. Remove from heat. Jam will thicken as it cools
Put into hot sterile jars, wipe rim, seal with hot sterile lids and rings. Let cool overnight. Label and store in dark cool area until ready to use.
Hot jam put into hot sterile jars and sealed with hot sterile lids and rings will usually seal themselves. But if you feel the need put thru hot water bath to a full boil, turn off heat and let sit in caner for 15 minutes. Remove, let cool over night...
Think you can't make Jam? Well, it's not as difficult as you might think! It is also fun!
Hope you find canning as enjoyable as I do! Thanks for looking!
