Vietnamese Chicken Noodle Soup ( Pho Ga )

    2 chicken breast fillets
    1 whole onion, cut in half
    2 oz fresh ginger chunk
    2 star anise
    1 tbsp coriander seeds
    2 cloves of garlic
    2 tbsp. fish sauce
    2 tbsp. rock sugar
    3 cans of chicken stock, 14oz each
    4-6 cups of water
    1 package of un-cooked rice noodles


    In a large pot add water, chicken stock, sugar, fish sauce, garlic, seeds, star anise, ginger and onion. Bring to boil and then simmer for 30 minutes. Scoop out ginger, onion, star anise and coriander seeds. You can also avoid this by tying all ingredients in a cheese cloth before adding to the pot. Making removal easy. Slice chicken breast in 1-2oz servings, bring broth to boil again and add chicken. Boil chicken in broth for 3-5 minutes or until fully cooked. For noodles follow instructions on package.

  • Serve with lime, mung bean sprouts, cilantro, hoison sauce and Sriracha hot sauce
