Vegetarian Stuffed Bell Pepper by Vegetarian Stuffed Bell PepperIngredients: 1 zucchini diced 5 mushrooms diced 2 big bell peppers of your choice Feta cheese diced (put as much as you like) Shredded cheese any cheese you like Grounded vegetarian meat 1 teaspoon of garlic powder 1 teaspoon of fines herbes 1 tbsp of dried or fresh thym 1 onion 3- 4 tbsp of olive oil Salt and pepper to taste 1 cup of rice cooked Some chicken seasoning to your taste (You can ad any vegetable you want)While cooking your rice add the chicken seasoning till the rice absorbs the water. In my recipe I have put 2 tbsp of the chicken seasoning.Dice all the veggies and onion. Put the olive oil in a medium heat pan. Add the onion wait 1 minute and add half of the grounded vegetarian meet. Add all the spices beside salt n pepper! Cook the vegetarian meet for 5 mins . Add the zucchinis till it's half cooked add the mushrooms . Let it cook for a minute. Add the rice . Finally add the feta cheese and add salt and pepper to taste.Take out the top of the bell pepper and take out the seeds inside of it. Stuff the bell pepper with the mix and top it off with the shredded cheese of your choice! After preheating your oven at 350. Put a bit oil on your the dish you will grill your bell peppers. Let them cook in the oven for 20 mins. You can broil for a few mins is desired! Note: make sure you stuff the bell pepper enough because when it will come out of the oven the mix in it would have shrink !Hope you like it! My recipe is for 2 people. If there is leftover of rice u can eat it the mix on it own! :)
