Vegan/ Vegetarian Sausage And Carrot Pasta

1 small onion
1 clove garlic
1 tin of chopped tomatoes
3 vegan/ vegetarian sausages
Mixture of herbs (I used oregano, thyme and coriander, but you can use whatever)
1 cup of pasta
1) chop up one small onion into chunks and chop the garlic up small. Cut the carrot into thin slices.
2) spray some fry light into a pan. Wait until it heats up and put in the chopped onion and garlic. Fry until the onion is clear.
3) place in one tin of chopped tomatoes.
4) season with salt, pepper and herbs to taste.
5) place in carrot and vegan/vegetarian sausages.
6) put on a timer for 20 minutes (that is how long it takes to cook).
7) place pasta on the boil and follow instructions on the packet.
You can either make this vegan by using vegan sausages or you can use something like Quorn sausages as a vegetarian option instead.
