Vegan Tofu and Seitan Bake
This is a must try and a recipe I suggest you master. A valuable source of protein and extremely delicious. Once mastered you will be using this in every recipe you can think of.
This is one of the most amazing tasting meat alternatives. Once cooked this can be sliced, diced or chopped to use in any of your recipes as a protein substitute. It works really well when sliced finely and used in sandwiches. This is a very versatile food.
200 g firm tofu, chopped
1 cup vital wheat gluten, you can buy it here
40 g chickpea flour
1 tablespoon nutritional yeast
1 teaspoon black pepper
1/4 teaspoon sea salt
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
1/2 small onion (approx 60 g), roughly chopped
1 tablespoon vitalite, or other vegan spread
1 teaspoon English mustard
2 cloves garlic
1 teaspoon tomato ketchup
1 teaspoon agave nectar
1 tablespoon soy sauce
1 teaspoon yeast extract
2 teaspoons gravy browning
1 tablespoon vegan Worcestershire sauce
60 ml water
Preheat the oven to 150 degrees Celsius.
Place all of the ingredients, except for the water, into a food processor and process well until all of the ingredients have combined. Add the water and process again until well mixed.
Turn out onto a board and shape into a large sausage shape.
Double wrap in foil to ensure that bake is well wrapped and bake in the oven for 1 hour. Remove from the oven and let cool to room temperature before removing the foil.
