  • These tips can improve any recipe, but let's start with the basics. 
 1: RECIPE CHOICE
 Any recipe that includes an icing or glaze is a no go, proper brownies are far too rich for that. They also shouldn't call for baking powder or soda, these will give you a cake like texture.

  • 2: BUTTER
  Whip the butter and sugar together for at least 5 minutes. When adding eggs or vanilla to butter, whip it between each addition to keep the fluffiness. This will give you the crisp top.
  3: SALT 
   Even if you use salted butter, don't skip the salt, just half what the recipe calls for.

  Don't forget your vanilla, this takes the bitterness out of the cocoa.
5: CHOCOLATE CHIPS
Go for dark and/or white chocolate chips. Avoid milk chocolate chips as they tend to just blend in with the brownie, or they can ever have a sour taste if they don't match the flavour.

  Yes coffee! Add 1 shot of espresso or 2 tablespoon of a dark roast coffee. This will bring out the chocolate flavour and make it super rich. Surprisingly no one can taste the coffee once it's baked. Starbucks VIA is great for this as u can add it dry, no water needed!

 1/2 cup Butter, softened
 1 1/2 cups white sugar
 1 tsp vanilla
 2 eggs
 3/4 cup Flour
 1/2 cup cocoa
 1/2 tsp salt
  1 to 2 TBSP dark roast coffee 
 1/4 cup Dark chocolate chips
  1/4 cup white chocolate chips

 2: Whip your butter and sugar in a large bowl for 5 minutes
 3: Add vanilla and eggs to butter mixture, whipping for 2 minutes between each egg.
4: In a separate bowl mix your flour, cocoa and salt, then sift into the butter bowl
    1: Preheat oven to 350F and lightly butter and flour an 8" square pan

    4: In a separate bowl mix your flour, cocoa and salt, then sift into the butter bowl
  • 5: Mix carefully with a spoon so as to not have it puff out everywhere, then add your coffee (I prefer a packet of Italian roast VIA) and mix it well, you can go back to your electric mixer now. 
 6: add your Chocolate chips, give it a good whipping, then put it in your prepared pan.

  • 7: Bake it for 40-45 minutes, or until a fork inserted in the middle comes out clean.

  Crisp on top with a gooey, rich middle.
  ✨BONUS TIP✨
 Make this into cookies by spooning onto a pan using tsps, and bake for 10-12 minutes. Same crisp outside and soft inside, be sure to let it cool on the pan before moving.
