  • Ingredients:

    For the cake:

    shortening for greasing pans
    2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon kosher salt
    1 cup plus 3 tablespoons unsweetened cocoa powder
    1 cup hot coffee, strong
    2 cups sugar
    3 large eggs, room temperature
    3/4 cup vegetable oil
    1 cup buttermilk
    1 teaspoon vanilla extract

    For the icing:

    450g icing sugar, sifted
    150g unsalted butter, at room temperature
    60g cocoa powder, sifted
    60ml milk
    Few squares of Cadbury's milk chocolate, melted

  • Method:

    For the cake:

    Preheat oven to 350 degrees F. Grease two 8-inch round cake pans with baking paper.
    Whisk together the flour, baking soda, baking powder, and salt into medium bowl.
    Whisk cocoa in another medium bowl. Pour 1 cup hot coffee over cocoa. Whisk to blend.
    Using electric mixer, beat sugar and eggs in large bowl until light and fluffy, about 2 minutes. Add oil to egg mixture and beat until blended. Beat in cocoa mixture. Add buttermilk and vanilla. Beat to blend. Add dry ingredients and beat on low just to blend. Transfer batter to prepared pans. Bake for 30-35 mins.

  • Method:

    For the icing:

    Beat the icing sugar, butter and cocoa powder together in freestanding electric mixer (Or use a handheld electric whisk) on medium/slow speed until the mixture comes together and is well mixed.
    Turn the mixer down to a slower speed. Add the milk to the butter mixture a couple of tablespoons at a time.
    When the milk has been incorporated, add the melted chocolate.
    Once all the chocolate has been combined, turn the mixer up to a high speed.
    Continue beating for about 5 minutes, until it is light and fluffy.

  • Spread the icing on top and decorate with what ever you want. :)
