Strawberry Basil Creamsicles ♡♡

  • 1 can full-fat coconut milk
    1/4 cup local honey or 5 pitted Medjool dates
    1 teaspoon lemon juice
    2 teaspoons vanilla extract
    2 cups fresh strawberries
    pinch of sea salt, Aztec Sea Salt is my favorite
    1 good handful fresh basil leaves

  • Combine the coconut milk, honey {or dates}, lemon juice and vanilla extract in a blender. I used my high-speed Blendtec, but any blender will do. Once this mixture is well combine, just a few pulses should do the trick.

  • Then add in the strawberries, give it a few more good pulses. Next add in the basil leaves and pulse again until leaves are chopped fine. Pour the mixture into your popsicle mold and freeze accordingly.
