Ingredients you will need:
Half can Goya tomato sauce
2 packet sazon (con culantro y achiote)
Green olives sliced
Tsp. smoked paprika
1Chopped onions ( I used onion powder)
2 cloves garlic chopped
Can of spam, cubed
Salt, black pepper
White med grain rice
1 can pigeon peas
In a thick Rice pot, add olive oil on med heat. Stir in sofrito, if using fresh onions add it now, add cubed spam, sliced olives and sauté for 3 mins. Mix in rice, pigeon peas and tomato sauce. Add garlic powder, onion powder, cumin, sazon and paprika.Season with salt and pepper. Stir for 3 mins. Last fill half an inch above the rice with hot water, stir lightly and let it come to a boil uncovered on med heat...
When the water evaporates till u still see a little water in it turn your heat to simmer stir one more time and cover the pot for 10 mins. The key is to stir less often...
After 10 mins gently stir the rice by folding it final time and cover lid again for another 10 mins. Top with cilanto if u like! Viola! I promise this recipe is delicious!
