  • Ingredients

    150 grams of butter
    3 tbsp of granulated sugar
    2 tbsp of cocoa
    1 egg, beaten
    2 x 170 grams packets of gluten free digestive biscuits
    1 packet of mini marshmallows

    for icing

    1 1/2 cups of icing sugar (confectioners sugar)
    1 tbsp of butter
    1 – 2 tbsp of cocoa (depending on how rich you like it)

  • Directions

    Melt butter, sugar and cocoa in a saucepan. Once melted, take off heat.

    Cool slightly and add in the beaten egg and whisk really fast to incorporate into the butter mixture.
    (make sure the egg doesn’t cook with white specks in the mixture)

    In a food processor crush the biscuits. Add biscuits and marshmallows to the butter mixture, stirring until all the mixture is coated. Press evenly in a tin.

    Mix icing ingredients together, add 1 tbsp of boiling water to the mixture and mix, add more water slowly until it comes to a smooth thick consistency, a tbsp at time.

  • Ice over mixture and place in the fridge to set, for at least a couple of hours before serving.
