Skinny Curried Cauliflower Bites

1 large head cauliflower
¼ cup egg whites
1 cup non-fat, plain Greek yogurt
1 Tbsp curry powder
¼ tsp ginger powder
1 Tbsp coconut oil
1.Preheat your oven to 450 degrees.
2.Line cookie sheet with parchment paper.
3.Wash, dry and grate cauliflower using a food processor (to the consistency of rice).
4.Stir fry the “cauliflower rice” until the cauliflower is slightly translucent.
5.Place in a bowl and let cool.
6.Place all other ingredients in the food processor and blend until smooth.
7.In a bowl, combine the “cauliflower rice” and blended ingredients. Mix completely.
8.Drop by spoonfuls or cookie baller onto parchment paper.
9.Place in preheated oven and bake for 25-30 minutes.
10.Once golden brown, remove from the oven and let cool.
