  • Sierra Mist Pound Cake

    3 - sticks (1 1/2 cups) butter, softened
    3 - cups sugar
    5 - large eggs
    1 - tablespoon fresh lemon juice
    1 - tablespoon fresh lime juice
    3 - cups all purpose flour or 3 1/2 cups cake flour
    1/2 - teaspoon salt
    1/4 - teaspoon baking powder
    3/4 - cup Sierra Mist lemon lime soda

  • Directions:
    Preheat oven to 325 degrees. In a stand mixer using the paddle attachment, or large bowl using an electric mixer, cream softened butter and sugar until creamy.

    Add eggs one at a time, blending well after each addition. Beat in the lemon and lime juice.

    In a separate bowl add the flour, salt and baking powder together.

    Add the flour mixture one cup at a time alternately with the sierra mist (starting and ending with flour), and blending after each addition.

  • Transfer the batter into prepared baking pan. Bake for 65 - 75 minutes or until golden brown and a cake tester inserted in the center of the cake comes out clean.

    Let cake cool in the pan for 15 minutes before removing cake to a baking rack to cool completely. While the cake is cooling prepare the glaze.

  • Sierra Mist Glaze:

    2 - cups powdered sugar
    1/2 - teaspoon fresh lemon juice
    1/2 - teaspoon fresh lime juice
    lemon zest
    2 - tablespoons sierra mist

    In a medium sized bowl add the powdered sugar, lemon juice, lime juice, sierra mist, and the lemon and lime zest. Blend everything together.

    Drizzle the half of the glaze over the cake and wait 30 minutes. Pour the remaining glaze over cake and cool completely until the glaze sets.
