1⃣. Crack a couple of eggs into a microwave safe bowl, I recommend 2 eggs unless you are sharing with someone else as it does get you pretty full. Also add in a pinch of both salt and pepper, then give that a stir till it's a runny consistency.
Now it's time to give your eggs some edge!
2⃣. Simply, choose your favourite vegetables ( keeping in mind which would be a good combination with the eggs) and chop them in small pieces, and put them in the egg mixture. Some good ones include: tomatoes, onion, capsicum, mushrooms and olives😊
3⃣. For all you cheese lovers, you can add your favourite shredded cheese to the bowl! It's a great way to add extra flavour and its tastes delicious with the eggs!
Before putting in the microwave...
4⃣. Using a whisk or a fork, mix the eggs, cheese and vegetables to an even combination of all ingredients throughout the mixture.
Let's get cooking!
5⃣. Carefully place the bowl in the centre of the microwave, and heat it up for 1:30-2:00. However half way through the cooking process give it a small stir to ensure it cooks properly. Keep a close eye on it guys!
