Pumpkin Pancakes! Perfect For Fall

  • Ingredients:
1 & 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tbsp vegetable oil
2 tbsp vinegar
2 cups flour
3 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground all spice (optional)
    Ingredients:
    1 & 1/2 cups milk
    1 cup pumpkin puree
    1 egg
    2 tbsp vegetable oil
    2 tbsp vinegar
    2 cups flour
    3 tbsp brown sugar
    2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp ground all spice (optional)
  • 1) In a bowl, mix together the milk, pumpkin, egg, oil and vinegar.

    2) In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon, salt (and all spice). Stir into the pumpkin mixture just enough to combine, do not over mix

  • 3) Heat a lightly oiled griddle or frying pan on medium high. Scoop the batter using a 1/4 cup for each pancake. The batter will be thick, so flatten with a spoon. Brown on both sides and serve hot
