  • Ingredients:
1/2c quick oats
1/8tsp ground ginger
1/8tsp ground nutmeg
1/4tsp ground cinnamon
1/2TBSP brown sugar
1/2c canned pure pumpkin 
1 egg
1/2tsp vanilla extract
Nonstick spray
    Ingredients:

    1/2tsp vanilla extract
    Nonstick spray

  • Directions:
In a bowl, combine oats, ginger, nutmeg, cinnamon, and sugar.  In a small bowl, beat egg and vanilla together.  Add to oatmeal mixture, thoroughly combine.  Add pumpkin to egg and oatmeal mixture, thoroughly combine.  Let sit 5 minutes.

  • Heat a nonstick skillet over medium heat.  Spray with nonstick spray.  Once skillet is hot, create 4 pumpkin pancakes as best you can.  They don't need to be pretty in shape.  Cook aprox 3 minutes on each side.
