Puerto Rican Rice (Arroz Con Gandules)

2 cups of grain rice (rinsed)
4 to 5 cups of water
1/2 cup of Sofrito
16oz can of gandules
handful of green olives (with the cappers)
1 packet of sazon with achiote
1 small can of tomato sauce
3 tbsp of oil
salt and pepper to taste
First in a medium sauce pan add oil tomato sazon sofrito and olives. Cook over medium heat for 4 minutes.Now add all other ingredients, water should be about 1 inch above the rice. Add salt and pepper until desired taste and mix. Bring to a boil and cook over high heat until water is mostly absorbed. Once the water is fully absorbed grab a fork and mix bottom to top only once or twice. Cover the rice and lower the stove to low. Cook for 30 minutes or until rice is tender. Then serve.
*Do not mix the rice when it has began to cook because this will cause the rice to be sticky/mushy*
