Pineapple & Carrot Muffins

  • INGREDIENTS:

    - 2 cups almond flour
    - 1tbs cinnamon
    - 1/2 teasp baking soda
    - Pinch salt
    - 3 eggs
    - Tbs olive oil
    - 1/4 cup honey
    - 1 tbs lemon juice
    - 1 teasp vanilla extract
    - 3/4 cup finely grated carrot
    - 1/3 cup finely diced pineapple
    METHOD:
    - Mix all together & cook on 170 degrees for around 25-30 min or until ready :)
