Rhubarb Strawberry Smoothie
A fruity smoothie that is quick and easy to make using frozen fruit.
1½ cup strawberry, frozen (but you could just as easily use fresh, cut up)
1½ cup rhubarb, frozen (ditto on using fresh)
1½ tablespoons honey (orange blossom honey is perfect for this recipe; substitute sugar or other sweetener if needed)
1½ cup milk (i used fat-free, but low fat, or regular is fine)
⅔ cup acai or pomegranate juice
In a blender, mix all together until smooth.
Blueberry Coconut Smoothie
4 ounces vanilla yogurt
2 cups frozen blueberries
½ cup shredded coconut (sweetened or unsweetened)
½ cup juice (pomegranate, acai or cranberry)
½ cup lowfat milk
In a blender pitcher, blend all ingredients together until smooth.
Since this recipes calls for frozen fruit, you'll have to keep working with the blender, stirring and reprocessing until smooth. I like mine thick, for a thinner consistency, add more liquid a little at a time until it's like you like it.
Easy Peach Fruit Smoothie Recipe
A fresh and fruity smoothie great for breakfast or snack time.
5 ounces vanilla yogurt
1½ cup fresh or frozen peaches
½ cup crushed ice
¾ cup coconut milk* (if needed, substitute milk of choice)
¼ teaspoon ground cinnamon
½ teaspoon sugar (adjust type of sugar and sweetness to preference)
Combine all ingredients in a blender until smooth.
Makes 16 ounces. * The Coconut Milk referred to here in this recipe is the refrigerated coconut milk. NOT canned coconut milk that separates into fat and liquid.
Pistachio Smoothie Recipe
It's a no fuss, tasty treat. Make mini portions for a party, or a full size smoothie for a meal or a snack.
⅓ cup pistachios
1 cup milk
2 teaspoons sugar
2 cups ice
8 oz. vanilla yogurt
1 banana (optional)
Add the pistachios, milk and sugar to a blender and blend until pistachios are finely chopped.
Add ice and vanilla yogurt and blend on high until smooth.
Without banana, makes approximately 24 fluid ounces.
