1/2 C coconut butter
1/2 C coconut flour
1 C flaked coconut
3 T cocoa powder
1 t vanilla extract
3 T coconut oil
2 T semi-sweet (or dark) chocolate chips
Blend everything except chocolate chips together in a food processor. Make sure it clumps together easily - the coconut flour will absorb a lot of moisture, so you may want to add more coconut oil (it will depend on how soft your coconut butter is too.) Shape into 8 balls and lay on a piece of waxed paper.
Melt chocolate chips and drizzle over the macaroons. You can leave them out to set or throw them in the fridge to speed them up. Store them in the fridge!
