Moroccan Stew

  • 350 grams meat of choice, diced
    2 onions, chopped
    2 tomatoes, chopped
    1 zucchini, sliced
    1 red bell pepper, chopped
    4 to 5 potatoes, peeled and diced
    2 tsp dried or fresh coriander
    1/2 tsp salt
    1/2 tsp ground black pepper
    1 tsp ground ginger
    1 tsp paprika powder
    1/2 tsp saffron
    pinch ground cinnamon
    300 ml luke-warm water
    asneeded olive oil, for frying

  • Directions

    Heat some olive oil in a pan and brown the meat in it with a pinch of salt.

    Add the onions and fry it on medium heat until they are soft.

    Add the tomatoes, salt, pepper, ginger, paprika, cinnamon, saffron and 1 tsp of coriander. Let it simmer on low heat for 5 minutes.

    Add 200 ml luke-warm water and 1 more tsp of coriander. Let it simmer on low heat for 15 minutes.

    Add the potatoes, zucchini, bell pepper and 100 ml more of luke-warm water. Let it simmer with the lid on it on low heat for 30 more minutes or until done.
