  • Ingredients

    275g (10oz) plain flour
    3 level tablespoons cocoa powder
    1 and a half level teaspoons baking powder
    1 and a half level teaspoons bicarbonate of soda
    215g (7 and a half oz) caster sugar
    3 tablespoons golden syrup
    3 large eggs, beaten
    225ml (8 fl oz) sunflower oil
    225ml (8 fl oz) milk

  • 1. Pre-heat the oven to 160 degrees/ Fan 140 degrees. Grease 2 x 20cm (8 inch) deep loose-bottomed cake tins, then line the base of each tin with baking parchment.

  • 2. Sift the flour, cocoa powder, bicarbonate of soda and baking powder into a large bowl. Add the sugar and mix well. Make a well in the centre of the dry ingredients and add the golden syrup, eggs, oil and milk. Beat well with a wooden spoon until smooth and then pour into the prepared tins

  • 3. Bake in the pre-heated oven for about 35 minutes or until well risen and the tops of cakes spring back when lightly pressed with a finger. Leave to cool in the tins for a few minutes, then turn out. Peel off the parchment then finish cooling on a wire rack. When cold, cut each cake in half

  • To make the icing you will need:

    60g (2 oz) butter
    30g (1 oz) cocoa powder
    3 tablespoons milk
    250g (8 oz) icing sugar sifted
    White chocolate curls to decorate

  • 1. Melt the butter in a pan.
    2. Add the cocoa powder and cook, stirring, for 1 minute.
    3. Stir in the milk and icing sugar.
    4. Beat well until smooth.
    5. Leave to cool until thickened
