Salmon, Zucchini and Cheese Scramble
This is a quick and easy low carb side dish with less than 5 grams of carbs per serve.
Makes 2 servings
1 zucchini cut into thin straws
1 x 158g can of tuna - discard brine or save for another use
40g grated cheese
1 egg beaten
1 tbsp cream
Olive oil for frying
Salt and pepper
Fry zucchini in a little bit of olive oil until nearly cooked through, season with salt and pepper. Beat together the egg and cream and add to the zucchini along with the salmon and cheese. Stir constantly until the egg mixture has cooked. Enjoy!
