  • I usually use frozen cauliflower for this recipe but you can certainly use fresh if you like.  Cook/Microwave a 16 oz bag of frozen cauliflower according to the directions on the bag.  Once it's finished make sure you drain all water.  Put the cauliflower in a bowl that can handle a stick blender.

  • Add 3 tablespoons of softened butter or margarine, 4 oz softened cream cheese and salt and pepper to taste.  Use a stick blender and purée until smooth.  You can always add more or less butter and cream cheese.  It all depends on your taste.

  • You can also switch it up and additional ingredients such as garlic or chives to the cream cheese and butter mixture.  Please note if the end result seems a little too wet, just throw it in the microwave or on the stove for a couple of minutes until the liquid evaporates a little.

  • My husband and I actually prefer this over mashed potatoes. This has a lot more flavor and the carbs are a lot lower than potatoes as well.
