Low Carb Mashed Potato Alternative. Great For A Thanksgiving Side Dish!

I usually use frozen cauliflower for this recipe but you can certainly use fresh if you like. Cook/Microwave a 16 oz bag of frozen cauliflower according to the directions on the bag. Once it's finished make sure you drain all water. Put the cauliflower in a bowl that can handle a stick blender.
Add 3 tablespoons of softened butter or margarine, 4 oz softened cream cheese and salt and pepper to taste. Use a stick blender and purée until smooth. You can always add more or less butter and cream cheese. It all depends on your taste.
You can also switch it up and additional ingredients such as garlic or chives to the cream cheese and butter mixture. Please note if the end result seems a little too wet, just throw it in the microwave or on the stove for a couple of minutes until the liquid evaporates a little.
My husband and I actually prefer this over mashed potatoes. This has a lot more flavor and the carbs are a lot lower than potatoes as well.
