Lemon Drizzle Cake With Greek Yoghurt

  • Ingredients:
    -3 eggs
    -170g self raising flour
    -170g caster sugar
    -170g butter
    -110g icing sugar
    -2 lemons
    -1tsp baking powder

  • Method:
    Mix eggs, sugar, butter, caster sugar, baking powder and the zest of 2 lemons in a bowl.
    Cook at 180 degrees Celsius for 30-45 minutes, depending on the size of the cake tin.
    Mix lemon juice and sugar. Poke holes in cake and pour over cake while still hot.
    Serve with Greek/Natural yoghurt
