Jessica's Cheesy Potato Soup (crock Pot Recipe With Few Ingredients)

  • 2 packs of Simply Potatoes Dice w/ onion
    1 32 oz Carton of Chicken broth
    1 onion diced
    3 stalks of celery-chopped
    salt/pepper to taste
    1/4 cup flour
    3/4 cup fat free milk (can use any kind you have)
    2 cups of shredded cheddar cheese (8oz bag)
    Diced bacon (optional for topping)

  • In the crock pot put both packages of the potatoes, onion, celery, chicken broth and salt/pepper. Cook on low for 6-8 hrs. Then mix together the flour and milk and add in and turn the crock pot on high for about 30 mins.

  • After the 30 mins stir in the cheese until melted. Serve with diced bacon if desired.

  • My family loves potato soup but the recipe I had been using called for all kinds of creams and expensive cheeses and such. Not to mention, it called for the veggies to be saute'd in separate pans. This one is easy with minimal ingredients.
