Jam Crumb Cake

  • Ingredients
    Cake;
    • 1 cup flour
    • 1/2 cup sugar
    • 1 tsp baking powder
    • 1 large egg
    • 1/4 tsp salt
    • 3/4 stick butter - melted
    • 1/2 milk & strawberry jam

    Crumb
    • 3/4 stick butter - melted
    • 1/4 brown sugar
    • 1/4 granulated sugar
    • 3/4 tsp cinnamon
    • 1 1/4 all purpose flour

  • Method:

    1 preheat oven 240C

    2 whisk together all cake ingredients except jam until well combined & smoothed

    3 pour mixture in greased pan

    4 dollop jam over mixture and swirl with spatula

  • 5 for the crumb: whisk together butter, cinnamon, salt & sugar until smooth

    6 stir flour with finger tips

    7 sprinkle crumbs in large clumps over cake mixture

    8 bake for 25 mins or poke toothpick in centre of cake & if it comes out clean it's done.
