1. Slice bagel in half and press until flattened to about half its normal thickness.
2. Add cheese alternating cheeses, and making sure that there is not too much cheese outside of the bagel.
3. Put whole butter on the flat top or pan on medium-hot, then place the grilled cheese on top. Place a light weight on top of the grilled cheese.
4. Check for golden brown color, then flip the sandwich, adding more butter and the weight again. Once both sides are golden and the cheese is melted properly, slice and serve.
