How To Make You Thai Fish Cakes!

I made these Thai fish cakes as our starter for our Valentines meal tonight. Initially I was a little disappointed as they didn't turn out as I had hoped but my hubby and I loved them and actually preferred them to the "real thing" and what's even better is they are so easy to make!!
I blended 2 fish fillets (can be any white fish) and around 10 king prawns (optional) until smooth.
I added 2 teaspoon of fish sauce, 4 chopped spring onions, a few sprigs of coriander, half a red chilli, 1 egg white, teaspoon of lime zest, a knorr stock pot of Lemongrass and ginger and a teaspoon of caster sugar and then blended again.
Knead the ingredients together for 5 minutes, shape into small patties and shallow fry in veg oil for 3-4 minutes until golden. Make sure you drain before serving.
I served with a cucumber salad - easy!!
Peel a cucumber and using the peeler strip the cucumber. Mix 2 tablespoons of rice wine vinegar with2 teaspoons of caster sugar and 1 teaspoon of fish sauce. Add a finely chopped red chilli and some coriander and mix in with the cucumber! Delicious!
