1/4 cup milk

  • Directions

    Beat eggs, milk, salt and pepper in bowl until blended.

  • Heat a large nonstick skillet over medium heat until hot. Add the butter and let it melt. When the foam from the butter has dissipated, pour egg mixture directly into the center of the pan. As eggs begin to set around the edges, gently pull across the pan with a spatula (silicone spatulas work great), forming large soft curds.

  • Continue cooking - pulling, lifting and folding eggs - until thickened and barely any visible liquid out they will be overcooked when you plate them). Do not stir constantly: let the eggs cook before move them

  • Serve and enjoy
