How To Make Delicious Fresh New Mexico Calabacitas

2 yellow squash 2 zucchini (1) 15oz can of whole kernel sweet corn 1/2 yellow onion chopped Desired amount of New Mexico green chile to taste (I like hot NM chile)
In a large non-stick skillet with 3-4 tablespoons of water, put your sliced yellow squash and zucchini to steam, covered. Occasionally stir. When your yellow squash and zucchini are nearly tender add in your chopped onion and corn. Mix together. Cover and occasionally stir. When mixture is completely tender uncover and add NM green chile to taste. Let mixture simmer over low heat to reduce liquid. Let stand 3-5 minutes. Serve and ENJOY!!!
