Honey Berry French Toast

  • Ingredients:

    Acai Cream Cheese Spread
    8oz/226g of cream cheese
    1 (100g/3.5oz) frozen Sambazon acai smoothie pack (sweetened or unsweetened)
    1 tablespoon of clear honey
    Honey Chocolate Sauce
    3 tablespoons/1.5 floz of clear honey
    ¼ cup/2 floz of water
    2/3 cup/5 floz of cocoa powder
    ½ teaspoon of vanilla extract
    Honey French Toast
    2 eggs
    ¼ cup/2 floz of milk
    ¼ cup/2 floz of clear honey
    ¼ teaspoon of salt
    ½ baguette, sliced (preferably day old)
    butter, for frying
    Berry Topping
    2-3 cups/16-24oz of assorted fresh berries (I recommend using sliced strawberries, raspberries and blackberries).

  • Acai Cream Cheese Spread
    Run the unopened frozen smoothie pack under warm water to soften it up.
    Snip off the top of the pack and squeeze out the acai puree into a food processor.
    Add the cream cheese and honey then process until smooth.
    The spread is now ready to serve. Pop it into the fridge to remain cool until the French toast is ready.

  • Honey Chocolate Sauce

    Add the honey and water to a small saucepan.
    Warm over a medium heat until it begins to simmer.

    Carefully add in the cocoa powder and combine using a spoon. Then whisk by hand for a minute or two to blend the cocoa powder thoroughly.

    Remove from the heat and whisk in the vanilla extract.
    Serve hot or cold. It should keep in your fridge for up to 3 weeks.

  • Honey French Toast

    Slice up half a loaf of baguette into ½ inch slices.
    In a small bowl whisk the eggs.
    Add the milk, honey and salt to the eggs then whisk again.
    Melt some butter in a large skillet.
    Dip the baguette slices into the egg mixture and then fry them in the pre-heated skillet over a medium heat until golden brown, turning once.

  • Serve Honey Berry French Toast

    Smother the acai cream cheese over each of the French toast slices, top with a few berries and drizzle on some honey chocolate sauce. Serve immediately.
