You need boneless chicken breast!
Stir fry these in extra virgin olive oil! Put a cap and a half (or just one cap depending on how many peppers you cut up) and put on medium heat. The peppers will shrink some and you'll be able to tell when they're done.
Marinate the chicken in lemon juice, garlic, and Italian dressing. Cook for 20 minutes on 450 F but don't put too much juice in the dish with the chicken. While that is cooking chop your peppers and prepare for them to be stir fried. Put the extra virgin olive oil in the pan, turn to medium, stir, and cover. Then while the peppers and chicken are cooking prepare your salad!!
