Ingredients: 3/4 cup of flour 1/2 cup of cocoa 1/4 tsp of self 1/2 tsp of baking powder 4 tbsp unsalted butter 2/3 cup of sugar (or stevia) 1 large egg 2 egg whites 1 tsp of vanilla extract 2 tbsp of espresso 1/2 cup of non-fat Greek yoghurt 1/4 semi sweet chocolate chips 1/4 cup of walnuts (opt)
Directions: 1) preheat oven to 350 degrees, line baking pan with oil & aluminium foil
Directions: 2) in a medium bowl mix together flour,cocoa,salt,baking powder and set aside
Directions: 3) with an electric mixer cream the sugar, and butter at medium speed for 2-3 minutes or until combined. Add egg, egg whites , vanilla and coffee. Continue to mix thoroughly.
Directions: 4) slowly add in flour while mixing. Then add in yogurt, the batter will then become thicker. After this point add in chocolate chips and walnuts if using.
Directions: 5) using a spatula scoop mixture into pan and bake for 20-25 minutes or until the point you can insert a toothpick with no batter sticking.
