Great recipe to make in advance and pop in the oven later!!
1 medium tomato chopped
1/2 a brown onion chopped
1 clove crushed garlic
Handful of chopped zucchini
2 slices of lemon
1-2 pieces of fish (I use barramundi)
Splash of white wine
Salt and pepper to taste
Additional chopped veges if you like (broccoli or asparagus would be good additions)
Preheat oven to 180 C (350 F)
Combine all ingredients in a bowl and let sit for while (depending on how much time you have, I often only let it sit for 5-10 minutes)
Get a piece of sturdy aluminum foil and lay down flat. Carefully place contents of bowl onto foil. Place another piece of foil on top and fold edges together.
Place on baking tray and cook for 15-18 minutes. Fish should flake apart easily with fork. Serve with chips or for a healthier option baked cauliflower
