Guinness, Bailey's And Jameson Chocolate Cupcakes

  • Ingredients for cupcake:
    1 cup Guinness

    1 stick and 1 tbs unsalted butter

    2 cups dark brown sugar

    3/4 cup sour cream

    2 eggs

    3/4 cup unsweetened cocoa

    1 tsp vanilla extract

    2 cups flour

    2 1/2 tsp baking soda

  • Directions (cupcake):
    1. Preheat oven to 350 and line muffin tin with cupcake liners.

    2. Combine Guinness and butter, chopped into 1-inch chunks, in a large saucepan to melt butter.

    3. Remove from heat and whisk in the cocoa and sugar.

  • 4. In a separate bowl, whisk the sour cream, eggs, and vanilla then add to beer mixture.

    5. Sift together flour and baking soda, then fold into batter.

    6. Pour into muffin molds and bake for 25 minutes. Let stand for 10 minutes and then remove note wire rack to cool.

  • Ingredients for frosting:
    1 stick unsalted butter at room temperature

    3 cups confectioners sugar

    Baileys Irish cream

    Jameson's Irish whiskey

  • Directions:
    1. Beat the butter on medium-high for a few minutes until creamy.

    2. Add a few short glugs if baileys and a tiny bit of Jameson and mix at low speed.

    3. Gradually spoon sugar into the bowl while mixing on low speed.
