Grab 'n' Go 15 Minute Muffins

•1 individual 4-ounce container of plain yogurt (keep this container to measure the remaining ingredients)
•2 yogurt containers of sunflower or vegetable oil
•2 yogurt containers of sugar
•3 yogurt containers of self-rising flour
•4 large eggs
*This recipe makes 8 large muffins
Preheat oven to 350. Line a large muffin tin with 8 muffin wrappers.
Scoop the yogurt into a medium-sized mixing bowl, and then use your discarded yogurt container to measure out the oil, sugar, and flour.
Add the eggs and stir to smooth the batter. Spoon the batter into the muffin wrappers, filling them 3/4 of the way.
Bake for 15 minutes or until cracked or browned on top. Serve warm, or cool on a wire rack.
More ways to mix it up
Apple and Cinnamon •grate one apple into the basic batter and add 3/4 teaspoon of cinnamon. Cut another Apple into 10 slices and top each muffin with a slice before baking.
Sour Cherry and White Chocolate •add 1/2 cup of white chocolate chips and 1/4 cup of dried sour cherries to the basic recipe, then bake.
Double Chocolate Chip • substitute 1/4 cup of flour in the basic recipe with the same amount of cocoa powder. Stir in 1/4 cup each of white and milk chocolate chips, then bake.
Lemon Drizzle • add the grated zest of one lemon to the basic recipe and bake. Then, while muffins are still hot, drizzle with a mixture of 2/3 cup confectioners' sugar combined with the juice of 1 lemon.
