  • Ingredients


    2½ cups all-purpose flour
    ⅓ cup sugar
    1 tablespoon baking powder
    1 teaspoon cinnamon
    ½ teaspoon salt
    4 tablespoons unsalted butter, melted
    ½ cup milk
    1 egg, lightly beaten
    2 teaspoons vanilla extract
    1 cup fresh blueberries
    oil for frying (about one quart)


    2 cups powdered sugar
    1-3 tablespoons lemon juice

  • Instructions


    In a the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugar, baking powder, cinnamon and salt and mix for about 30 seconds.

    Add the melted butter and stir until small crumbs begin to form.

    In another bowl, combine the egg, milk and vanilla extract, stir together.

    Slowly add the egg mixture to the flour and butter mixture and beat on low speed until it starts to come together but is not completely combined.

  • Add the blueberries and finish mixing with a spoon, be carefully not to smash the blueberries. A few is fine, but the more you smash the wetter and more difficult your batter will be to handle.

    Form into a large ball, and then roll or press it out onto a large, floured surface to about ½ inch thickness.

    Cut the donuts and centers. Repeat with the dough scraps until all the dough is used.

  • Heat the oil in a large pot to 375 degrees. Fry the donuts 1-3 at a time, frying for about 90 to 120 seconds per side. (After your first donut, check it by cutting into the center to make sure the dough is cooked throughout.)


    Whisk powdered sugar and lemon juice one tablespoon at a time until a smooth, runny glaze forms. If the glaze is to thin or to thick, add more powdered sugar or more lemon juice to adjust.

    Dunk the donuts in the glaze and lets sit on a wire rack until the glaze hardens.
