Fruit And Custard Tarts 😋

  • Ingredients 
    12 pre-made tart shells (or you can make them yourself)
    2 egg yolks
    1/4 cup sugar
    1/4 cup flour
    1 cup milk or whole milk
    Various fruits
    3/4 cup apricot jam (optional)

  • Make the custard

    Whisk the egg yolks, sugar and flour in a medium sized bowl.

    Heat the milk in a pot until it's almost boiling, remove it from heat and slowly pour it into the egg mixture, whisking the entire time.

  • Once all of the milk has been added and mixed in, return the mixture to the pot and heat (medium-low) until the custard thickens.

    Remove the custard from heat and place a piece of plastic wrap on the surface of the custard to prevent a layer of 'skin' from forming on it while it cools.

  • While the custard is cooling, bake your tart shells by box or recipe directions.

    At this time, you can also prep the fruit you are using. I chose to use frozen raspberries because I like the addition of the juice produced by thawing them, but you can use anything you'd like.

    Once the tart shells and custard are cooled, spoon the custard into the shells and top with fruit. 

    If you want to make the tarts shiny (and help set the fruit in place), heat up the apricot jam until it is almost a liquid. Brush the jam over the fruit generously.

    Serve or refrigerate!
