Fish and Margarita Chips

  • Margarita chips:
    1-2 red potatoes per person
    Kosher salt, fresh ground pepper & fresh lime juice to taste.

    1. Cut potatoes into chips.
    2. Fry at med-high heat until crispy.
    3. Season w/ salt, pepper & lime juice.

  • Fried fish:
    1-2 white fish fillets per person (I used Talapia)
    Kosher salt, fresh ground pepper & fresh lime juice to taste.
    1/2 cup corn starch
    1 egg (beaten) per every 2 fish fillets.

  • 1. Season both sides of each fish fillet w/ the salt & pepper.
    2. Dredge a fillet in the cornstarch.
    3. Thoroughly coat the fillet in the beaten egg.
    4. Fry on med-high heat until golden brown.
    5. After the fish has finished frying sprinkle w/ fresh lime juice.

  • Serve fish & chips w/ malt vinegar or balsamic vinegar & tartar sauce.

  • Great for Meatless Fridays!
