Edemame Hummus by Edemame Hummus Ingredients: 2 packages of edemames Kosher salt A package of frozen peas 1/2 cup of fresh lemon juice 2 tablespoons of diced garlic 1/2 tablespoon of ground coriander 1/4 tablespoon of ground cumin 3/4 cup of Virgin olive oil 1/4 of fresh diced cilantro Freshly ground black pepperPrep: Cook edemames in large bowl of boiling water with salt until tender. 3-5 minutes move to a bowl of ice water to stop the cooking. Cook the peas in the same way until they are cooked 1 minute.add them to a bowl with iced water.Add the edamame and peas in a food processor to form a coarse puree30sec. Move to a medium bowl,add juice and the next 3 ingredients. Gradually stir in 3/4 cup of oil,mix well. add 1/4 cup of cilantro and 1/4 cup of mint.season with salt cover and refrigerate. pass to a serving bowl. drizzle with oil and garnish with more herbs. Serve with endive or lettuce
