1. Scoop the inside of the mushrooms, to make a bowl shape.
2. Crush the garlic, slice the cheese and chop the pancetta.
3. Put as much as you like into the mushrooms.
4. Cook for 20 mins at 180c.
5. Spread the rocket leaves on a plate and place the mushrooms on top.
6. Season with salt and pepper.
7. In my opinion...COVER with balsamic vinegar
