Easy Rose Peach Pastries

For this recipe you can use canned peaches or fresh peaches. If you use fresh you must make a peach reduction. It is optional to leave the skin on the fresh peaches but it will make them chewy.
The reduction for the fresh peaches needs 2 cups of water, 4 cups of sugar. Boil the water and add the sugar, wait until the sugar is completely dissolved then add 4 peaches that have been cut into thin slices with the skin removed. Keep the sugar water boiling until it turns into a thin syrup.
I didn't make homemade puff pastry I just bought some frozen at the store. I used tender flake but any brand will work. Roll the puff pastry out with a rolling pin into a large rectangle. Cut the puff pastry into rectangular strips that are about 5 inches long by 2 inches wide (Use a pizza cutter).
Assembly: take a strip of the puff pastry and place it flat on the counter. Then take 2 or 3 peaches that have had the juices patted off with a paper towel (if using the reduction make sure they have cooled) and place in a line along the puff pastry as the picture shows. Make sure you leave a space.
Assembly part 2: after the peaches have been placed on the puff pastry take the front part and roll to the end that has the space at the end. Make sure to twist the bottom shut so the peaches aren't touching the pan.
Place the peaches on a greased cookie sheet, I used olive oil but you could use non stick cooking spray. Don't use butter because the bottom of the puff pastry will burn.
Next put into a oven that has been preheated to 375 Fahrenheit and bake for approximately 25-30 mins or until golden brown on the bottom. When you take them out of the oven add a little bit of the peach syrup reduction you made or the syrup out of the can of peaches and drizzle over the top.
The finished product should look something like this :) they last about 3-4 days when stored in the refrigerator. The measurements for the peach syrup reduction do not have to be 100% accurate if you want them more or less sweet adjust the sugar water ratio
