  • 4 cups, icing sugar.

  • 1/2 teaspoon, cream of tartar.

  • 7 cups, desiccated coconut.

  • 2x 395g can, sweetened condensed milk.

  • 1 teaspoon, vanilla essence.

  • 2 - 4 drops, pink food colouring - Add more, depending how deep a pink colour you want.

  • Method:

    1. In a square or rectangle cake tin, grease and line with baking paper, on all sides.

    2. Combine all of the dry ingredients into a large bowl, sifting icing sugar in(optional).

  • 3. Add both cans of condensed milk to the mixture and combine. You may need to use your hands as the mixture may become quite tough to work with.

    4. Separate half of the mixture into another bowl.

  • 5. With one half of the mixture add the vanilla essence and combine.

    6. With the other half of the mixture add the food colouring and combine.

  • 7. Transfer vanilla mixture into the lined tray and pat down firmly, so it is even and flat. Do the same with the pink mixture to the top of the vanilla mixture.

    8. Transfer the tray into the fridge and let it set for 3 hours or until hard. Once set, cut into squares.

    * Store in the fridge in an airtight container.
