Easy Cashew Chicken (aka Nutty Chicken Cubes)

  • 1 Tbsp oil
    4 stalks celery, sliced
    1 small onion, chopped
    2 boneless skinless chicken breasts, cut in chunks or strips
    6 Tbsp soy sauce
    3 Tbsp sugar
    1/2 cup water
    1/2 cup cashews (or other nuts of your choice)
    Hot cooked rice

  • Cook cubed chicken in a skillet with the oil till golden brown and cooked through. Set aside. Add celery and onion to the pan and cook for 3-4 minutes, or till crisp tender. Add chicken back into the pan. Mix soy sauce, sugar, and water and add to pan. Cook for about 2-3 minutes. Serve with rice, and top with cashews.
