Shape the rice into small rectangles. Slice the spring onions into small and thin pieces. Place small strips onto the rice as above.Slice the smoked salmon in rectangles to fit over the pieces of rice. Place gently on top of the rice and spring onions. Slice and place pieces of avocado on top of the smoked salmon. Serve with your choice of dipping sauce. I prefer sweet chilli sauce or soy sauce. Enjoy!
