Works for any cut of Chicken, and any spice mix...
To create a marinade, basically make a dressing/sauce - can include anything you want as long as the base has some type of oil (to keep meat moist), and usually cut with a few splashes of vinegar (NOT water).
Marinade thawed chicken in glass baking pan, coating all pieces well (I use my hands to rub all the seasoning in everywhere).
Cover pan with aluminum foil (shiny side UP) & let sit in fridge for a couple of hours.
When ready to cook, remove pan from fridge while preheating oven.
Preheat oven to 400°F, bake chicken COVERED for 40 minutes, then turn oven OFF & let chicken sit in warm oven another 10 minutes.
Remove from oven, take off foil, ENJOY!
*please be careful, chicken will still be steaming hot
