  • BLACKBERRY CRUMBLE RECIPE

Ingredients - 

550 gram(s) (1 1/4lb) blackberries
2  oranges, one segmented; one for zest and juice only
100 gram(s) (3 1/2oz) butter
65 gram(s) (2 1/2oz) caster sugar
100 gram(s) (3 1/2oz) plain flour
    BLACKBERRY CRUMBLE RECIPE

    Ingredients -

    550 gram(s) (1 1/4lb) blackberries
    2 oranges, one segmented; one for zest and juice only
    100 gram(s) (3 1/2oz) butter
    65 gram(s) (2 1/2oz) caster sugar
    100 gram(s) (3 1/2oz) plain flour
  • Method -

    1) Preheat the oven to 220ºC/ 200ºC fan/Gas 7. Mix the berries, orange, zest and juice in a bowl.

    2) In a separate bowl, rub together remaining ingredients using your fingertips, until they resemble fine breadcrumbs.

    3) Put the fruit mixture in 4 small or 1 large gratin dish and top with the crumble mixture. Bake in the oven for 12-15 minutes until golden.

    Serve warm, on its own or with ice cream or custard.

  • TROPICAL FRUITS WITH CARAMEL

INGREDIENTS - 
2  bananas, peeled and sliced
250 gram(s) pineapple chunks
2  passion fruit (optional)
 chopped pecans, to serve (optional)
 For the caramel sauce
25 gram(s) (1oz) butter
50 gram(s) (2oz) soft brown sugar
75 gram(s) golden syrup
75gram double cream
    TROPICAL FRUITS WITH CARAMEL

    INGREDIENTS -
    2 bananas, peeled and sliced
    250 gram(s) pineapple chunks
    2 passion fruit (optional)
    chopped pecans, to serve (optional)
    For the caramel sauce
    25 gram(s) (1oz) butter
    50 gram(s) (2oz) soft brown sugar
    75 gram(s) golden syrup
    75gram double cream
  • Method -

    1)In a small heavy-based saucepan, add butter, sugar and golden syrup, and melt over a low heat, stirring till all combined.

    2)Bring to the boil, then lower heat and bubble gently for 5 mins. Stir in cream and continue cooking till sauce is smooth. Allow to cool a little.

    3) In a small bowl, mix bananas and pineapple. Halve passion fruit, if using, and scoop out seeds. Add to bowl, mix, then divide between serving bowls.

    Pour over sauce and top with chopped pecans, if using.

  • MARBLED CHOCOLATE POTS RECIPE

Ingredients - 400  double cream
100 gram(s) (3½oz) icing sugar
100 gram(s) (3½oz) plain chocolate, broken into little pieces
 Raspberries, to decorate
 Chocolate shapes, to decorate - made by drizzling melted plain chocolate onto tin foil
    MARBLED CHOCOLATE POTS RECIPE

    Ingredients - 400 double cream
    100 gram(s) (3½oz) icing sugar
    100 gram(s) (3½oz) plain chocolate, broken into little pieces
    Raspberries, to decorate
    Chocolate shapes, to decorate - made by drizzling melted plain chocolate onto tin foil
  • METHOD -

    1)Whisk together the cream and icing sugar until softly peaked.

    2)Melt the chocolate pieces in a bowl in the microwave and stir into the cream mixture, folding with a spoon to create a marbled effect.

    3)Spoon into chilled dessert glasses and chill in the fridge for 3-4 hours.

    When chilled, decorate with the raspberries and chocolate shapes and serve at once.
