Dinette Cake With Chocolate Buttercream

  • INGREDIENTS

    1¼ c. all-purpose flour
    1 c. sugar
    1½ tsp. baking powder
    ½ tsp. salt
    ¾ c. milk
    ⅓ c. shortening
    1 egg
    1 tsp. vanilla

    Chocolate Buttercream

    4 Tbsp. butter
    2 Tbsp. cocoa
    1 tsp. vanilla
    2 cups powdered sugar
    2-3 Tbsp. half-n-half (or milk or cream)

  • INSTRUCTIONS

    Heat oven to 350 degrees. Grease and flour square pan, 8 x 8 x 2 inches or 9 x 9 x 2 inches.

    Measure all ingredients into large mixer bowl. Blend ½ minute on low speed, scraping bowl constantly. Beat 3 minutes high speed scraping bowl occasionally.

    Pour into pan. Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool on cooling rack.

    To make the frosting: combine all ingredients and mix until smooth.

  • NOTES

    This cake is so versatile. You can leave the frosting off and top it with berries and cream or even frost it with another flavor frosting
