  • Next add the pineapple juice and chunks to a yellow cake mix-(I prefer lemon cake mix!) . Mix until you have a thick and creamy consistency (should still have pineapple chunks visible.) you can simply stir well with a fork or whisk.

  • Pour batter into a cake pan. Shallow is good. Place cake on middle rack of pre heated oven.(450 degrees). Cook for ten minutes or until a knife comes out clean after being dipped in center.

  • Let cake cool off for at least an hour. Place in fridge to speed up cooling time. Remove cake from pan carefully (it will be moist) onto cake plate. This is good with or without frosting. I frost mine with a buttercream (store bought and totally vegan despite the name) frosting and add pineapple.
