Ingredients for Sweet and Sour Molasses Sauce:
1/3 cup apple cider vinegar
4 Tbsp brown sugar
1 Tbsp ketchup
2 tsp soy sauce
1 tsp molasses(optional)
2 tsp cornstarch mixed with 4 tsp water
2 Tbsp sweet chili sauce
1 tsp red pepper flakes
Instructions for chicken:
Fill a container with water and marinate chicken wings in lemon juice and 2 Tbsp salt for 30 minutes. Mix baking powder and flour in a small bowl and set aside.
Add all wings into a large bowl and coat them with the flour mixture.
Shake off excess flour and lay in a single layer in a baking rack skin-side up over a large roasting tray.
Put in the fridge for about 2 hours to dry out.
Preheat the oven to 450.
Drizzle the wings with olive oil or coconut oil and bake for 35-40 minutes until
deeply golden and crispy.
Remove from the oven and flip the wings over, drizzling oil on the second side, and continue baking until this side is golden brown and crispy, approximately 25-30 minutes.
Instructions for Sweet and Sour Molasses Sauce:
Whisk the vinegar, brown sugar, ketchup, red pepper flakes and soy sauce and bring to a boil in a small pot over medium heat.
Add the molasses and continue stirring for 2 minutes.
Whisk together the cornstarch and water, add to the other ingredients
in pot, and stir to thicken.
Add the sweet chili sauce as the sauce begins to cool to slightly dilute the thickened sauce and add more flavor.
